1 Step 1: Heat the oil in a heavy pan over medium-high heat. Add the whole spices (cinnamon, cumin seeds, cloves, coriander seeds, peppercorns) and the chopped onion, and saute until golden brown, about 8 to 10 minutes. Splash in 2 tablespoons of water to loosen any browned bits.2 Step 2: Once the water has dried up, add the garlic and ginger and saute for 1 minute. Add the ground beef and cook, breaking it up with a wooden spatula, until it loses its pink color and its moisture evaporates, about 4 to 5 minutes.3 Step 3: Add the tomato, chilies, coriander, cumin, turmeric, red chili powder, black pepper, salt and yogurt. Saute for 4 to 5 minutes, until the tomato breaks down and the oil separates from the beef. Add the potatoes and the 1/4 cup water and stir well.4 Step 4: Lower the heat to low-medium, cover the pan and cook for 25 minutes, stirring once, until the potatoes are very tender.5 Step 5: If the keema is wetter than you like, turn the heat to high and saute uncovered for a few minutes to evaporate the extra moisture. Off the heat, stir in the garam masala (if using), lemon juice and cilantro, then serve hot.getsaucepan.com/r/cb7e672b-d44b-5e59-a24e-22282de8e155
