1 Step 1: Roast the cumin and coriander seeds in a dry pan until fragrant, then grind them with the black cardamom seeds and cinnamon to a fine powder.2 Step 2: Pulse the minced chicken, ground spices, poppy seeds, salt, chili powder, gram flour, vinegar and water in a food processor until smooth and evenly mixed. Do not overprocess.3 Step 3: Pan-fry a small test patty, taste it, and adjust the salt and chili before shaping the rest.4 Step 4: Shape the mixture into about 24 small to medium balls, wetting your hands so they stay smooth and crack-free.5 Step 5: Fry the onion in the oil over medium heat until deep brown, adding the garlic for the last few minutes.6 Step 6: Blend the onion and garlic to a smooth paste.7 Step 7: Return the paste to the pot, stir in the yogurt and all the curry spices, and sauté over high heat until the oil separates from the masala.8 Step 8: Add 2 to 3 cups of water and bring to a boil.9 Step 9: Add the meatballs, reduce the heat to low, cover, and simmer for 20 minutes. Gently swirl the pot once or twice rather than stirring with a spoon. The meatballs are done when cooked through and no pink remains in the center; they should reach 165°F (74°C).10 Step 10: Garnish with poppy seeds or serve plain, and serve hot.getsaucepan.com/r/efb72454-59b3-5c92-b072-2d86a71c5307
