1 Step 1: Char the whole eggplants over an open flame, on a grill or under a broiler, turning often, for 15 to 20 minutes until the skin is blackened and the flesh is completely soft. Pierce them first with a fork so they do not burst.2 Step 2: Let the eggplants cool enough to handle, then peel off the charred skin and discard it. Drain the flesh in a colander, then roughly chop it.3 Step 3: Heat the olive oil and butter in a large skillet over medium-low heat. Add the garlic and fry for about 1 minute, until fragrant and just golden, then stir in the turmeric.4 Step 4: Add the tomatoes, tomato paste and salt. Bring to a simmer over medium heat, then cover, lower the heat and cook for 5 minutes.5 Step 5: Stir in the chopped eggplant, raise the heat to medium to warm through, then reduce to low, cover and cook for about 15 minutes until a thick stew forms. If it is still watery, uncover and cook 5 more minutes. Season with salt and pepper.6 Step 6: For scrambled-style eggs: beat the eggs, pour them over the thickened mixture and stir gently for about 1 minute until just set and soft. Remove from the heat, rest 5 minutes, then top with pepper and herbs.7 Step 7: Alternatively, for runny yolks: beat the whites of 2 eggs with 1 whole egg and stir into the mixture. Make 4 wells, drop in the remaining yolks, cover and cook over medium heat for about 2 minutes until set to your liking. Rest 5 minutes, then top with pepper and herbs.8 Step 8: Serve warm with flatbread or over rice.getsaucepan.com/r/461ebe96-0c9d-56ac-be41-7e2a72082055
