1 Step 1: Dissolve the yeast and sugar in the warm water and let it stand about 5 minutes, until foamy.2 Step 2: Mix the flour and salt, add the yeast mixture and 2 tablespoons oil, and stir into a soft dough. Knead on a floured surface for 3-5 minutes, until smooth and soft, adding a little flour if it is very sticky.3 Step 3: Place the dough in an oiled bowl, cover, and let rise in a warm spot for 1 hour, until doubled in size.4 Step 4: While the dough rises, heat 1 tablespoon oil in a skillet over medium heat. Cook the onion 3-4 minutes until soft, add the spinach and cook until wilted, then stir in the sumac, chili flakes, salt and pepper. Remove from the heat and let cool.5 Step 5: Preheat the oven to 500°F (260°C) with a baking sheet inside, and line a second sheet with parchment dusted with semolina.6 Step 6: Divide the risen dough into 2 pieces. On a lightly floured surface, roll each into an oval about 16 inches (40 cm) long and 8 inches (20 cm) wide.7 Step 7: Spread the cheese down the centre of each oval and top with the cooled spinach, leaving a 1-inch (2.5 cm) border. Fold the long edges up over the filling and pinch the ends into points to form a boat shape.8 Step 8: Mix the beaten egg with the olive oil, brush over the edges, and sprinkle with seeds if using.9 Step 9: Slide the pide onto the hot baking sheet or into the oven on the parchment, and bake 12-15 minutes until golden brown and crisp at the edges and the cheese is melted.10 Step 10: Cool for a few minutes, then slice and serve warm.getsaucepan.com/r/8dc3ec83-0fcf-5959-8035-d7f93f8adf18
