1 Step 1: In a large bowl, beat together the flour, starch, water and salt until the batter is thin and completely smooth. Fold in roughly two-thirds of the chopped scallions and let the batter rest while you prep the egg.2 Step 2: In another bowl, beat the eggs with a few pinches of salt, a little black pepper and the rest of the scallions.3 Step 3: Set a 10-inch non-stick skillet over medium-low heat and coat the surface with a thin film of oil.4 Step 4: Give the batter a quick stir, ladle in about 1/3 cup, and tilt the pan to spread it into a thin, even circle. Let it cook for 4 to 5 minutes, until the underside turns light golden and the surface looks mostly dry. Do not flip it yet.5 Step 5: Slide a spatula under one edge of the crepe, pour about 1/4 cup of the beaten egg over the cooked surface, and spread it out to cover. Cook for 2 to 3 minutes, until the egg has firmed up.6 Step 6: Turn the crepe over so the egg faces up. Place one slice of ham and one slice of cheese on half of it, then fold it over two or three times into a neat rectangle, pressing lightly. If you use deli turkey in place of ham, it is already cooked and ready to eat; the heat here just warms it through and melts the cheese, so you can skip any internal-temperature check, though if you instead cook raw poultry for the filling, it must reach 165°F (74°C) in the thickest part, with juices running clear and no pink remaining.7 Step 7: Cook the remaining batter and egg the same way, adding a bit more oil to the pan whenever it looks dry. Cut each warm pancake into bite-sized pieces and serve right away.getsaucepan.com/r/8c973cbf-3ba3-5ea0-9ae3-1921f241a3a2
