1 Step 1: Stir the yogurt, lemon juice, garlic, ginger, garam masala, chili powder, turmeric and salt together in a large bowl. Add the chicken, coat well, cover and refrigerate at least 1 hour, or up to overnight.2 Step 2: Heat 2 tablespoons of the butter in a large skillet or Dutch oven over medium-high heat. Lift the chicken from the marinade, shaking off the excess, and brown it for 2 to 3 minutes per side. Set the chicken aside; it does not need to be cooked through.3 Step 3: Melt the remaining 2 tablespoons butter in the same pan over medium heat. Cook the onion for 5 to 7 minutes, stirring, until soft, translucent and starting to turn golden.4 Step 4: Add the garlic, ginger, cumin, garam masala and chili powder. Cook for 1 to 2 minutes, stirring constantly, until fragrant.5 Step 5: Stir in the tomato puree and the green chili if using. Reduce the heat to medium-low and simmer for about 10 minutes, until the sauce darkens and thickens.6 Step 6: Return the chicken and any juices to the pan. Slowly stir in the cream, then simmer gently for 10 to 15 minutes, stirring occasionally, until the chicken is cooked through (165°F/74°C) and the sauce is thick and glossy.7 Step 7: Taste and add salt as needed. Remove the green chili, garnish with cilantro and serve hot with rice or naan.getsaucepan.com/r/c03a97e1-3d0a-5dca-9597-cf0379a1323b
