1 Step 1: Heat the oil in a pot or earthenware pot over medium heat. Add the onion and garlic and cook 3 to 4 minutes, stirring, until the onion is translucent but not browned.2 Step 2: Stir in the gochugaru and gochujang and cook for about 30 seconds, just until the oil turns red and fragrant. Do not let the chili flakes scorch.3 Step 3: Add the kimchi with a splash of its juice and cook 1 to 2 minutes until its juices release.4 Step 4: Pour in the stock, then add the zucchini, soy sauce and sugar. Bring to a boil, then simmer gently for 5 minutes.5 Step 5: If using seafood (clams, mussels or shrimp), add it now and cook until the shells open and the shrimp turn opaque, about 3 minutes.6 Step 6: Spoon the tofu into the pot in large rough pieces without stirring hard. Add the sesame oil and simmer gently for 5 minutes until the tofu is hot and has taken on the broth's flavor.7 Step 7: Season with fish sauce and black pepper to taste. Crack an egg into the middle of the stew, cover, and cook 1 to 2 minutes until just set; for a runny yolk, cook about 1 minute.8 Step 8: Scatter the scallions over the top and serve immediately, bubbling hot, with steamed rice.getsaucepan.com/r/a5a73ad2-8058-5de4-b30b-edbe8b5996e7
