Where the numbers come from

Weights are from USDA FoodData Central, the US government's food database, except where a row names its own source (USDA cup-weight study (HERR 41, 1977), King Arthur Baking weight chart, Chobani and Fage nutrition labels, Diamond Crystal nutrition label, Morton nutrition label). A US cup is 236.6 ml, a tablespoon 14.8 ml and a teaspoon 4.9 ml.

Kosher salt brands differ by almost double. A cup of Diamond Crystal weighs about half as much as a cup of Morton, so a recipe written for one is too salty or too bland with the other. Weighing fixes that.

Questions

How many grams is a cup of flour?

One US cup of all-purpose flour weighs 125 grams when you spoon it into the cup and level it. Scooping with the cup packs it and adds 10 to 15 grams.

How many grams is a cup of sugar?

How many grams is a cup of butter?

A US cup, which holds 236.6 ml. A metric cup (Australia, Canada, New Zealand) holds 250 ml, about 6% more. To convert a metric cup, choose milliliters and enter 250.
