The size is the weight of a dozen, not the size of the egg. Recipes assume large eggs unless they say otherwise.

How it is calculated

  • Weight of one egg = minimum ounces per dozen ÷ 12.
  • Eggs needed = eggs in recipe × weight of recipe size ÷ weight of your size.

Worked example

3 large eggs (2 oz each) equal 6 oz. A jumbo egg is 2.5 oz, so you need 2.4 jumbo eggs: use 2, then add part of a beaten third.

Questions

What size egg do recipes use?

Large, unless it says otherwise.

How is egg size decided?

By weight per dozen, not by how big the eggs look. A dozen large eggs weighs at least 24 ounces.

Do I weigh the egg in or out of the shell?

The USDA classes are for eggs in the shell. For baking, you can beat the egg and weigh out the amount you need.

What if the answer is a part of an egg?

Beat the extra egg and use part of it, by weight or by spoonful.

Do small differences matter?

In cakes and custards they can. Using 1 extra large egg for 1 large egg is a 12.5% difference, which is rarely a problem.

Are the weights exact?

They are minimums for the class, for a dozen. Single eggs in a carton vary, so treat the answer as close, not exact.
