Reading the numbers

  • Recipe hydration leaves the starter out. This is the number most recipes print.
  • Hydration counts the water and the flour inside the starter. It is the true wetness of the dough.
  • A starter at 100% hydration is half flour and half water by weight.

How it is calculated

  • Baker's percent = ingredient weight ÷ total flour weight × 100.
  • Starter flour = starter ÷ (1 + hydration ÷ 100). Starter water = starter − starter flour.
  • Total flour = flour + starter flour. Total water = water + starter water.
  • Hydration = total water ÷ total flour × 100.
  • Feeding 1:a:b: seed = target ÷ (1 + a + b); flour = a × seed; water = b × seed.

Worked example

450 g flour, 330 g water, 10 g salt, 100 g of 100% starter: total flour 500 g, total water 380 g. Hydration 76%, salt 2%, starter 20%.

Sources

  • Baker's percentage (arithmetic definition)

This is a definition, not a measurement: each ingredient divided by the weight of flour. No outside source needed. Counting the starter's own flour and water is the more exact convention and some bakers leave it out, so both hydration figures are shown.

Questions

What is baker's percentage?

Every ingredient is written as a percent of the flour weight. The flour is always 100%. 500 g flour, 375 g water and 10 g salt is 100%, 75% and 2%.

What is hydration?

The weight of water divided by the weight of flour, as a percent. 75% hydration means 75 g of water for every 100 g of flour.

Does the starter count?

It should. A 100% hydration starter is half flour and half water by weight. This calculator counts both, and also shows the recipe hydration without the starter.

What is a 1:2:2 feeding?

One part starter, two parts flour, two parts water, by weight. 40 g starter, 80 g flour and 80 g water makes 200 g at 100% hydration.

How much salt should I use?

That is up to the recipe. Salt is shown as a percent of the total flour so you can compare recipes.

Why does my hydration differ from the recipe's?

Many recipes list hydration without the starter. This calculator shows both so you can compare.
